Fajitas are a great dish, tasty and fun, but unfortunately the plastic packaging is hard to avoid. I've come up with some alternative solutions to avoid this. I have opted for a vegetarian version as we are reducing our meat consumption but you could easily adapt this recipe by getting some chicken from the butcher and bringing your own containers. The main issue tends to be the tortilla wraps which are usually sold in non-recyclable plastic bags. Keep reading for some super easy and fun home-made fajita wraps! Ingredients (4 people):
- 2 chopped red onion (loose)
- 4 chopped bell peppers (loose)
- 1 tin of beans - your choice, I use pinto (metal tin)
- olive oil (glass bottle)
- passata (in glass bottle) or chopped tomatoes (in metal tin)
- seasoning (smoked paprika, cumin, coriander, oregano, chilli and garlic)
- 300g flour (paper bag)
- 200g natural yoghurt (home made or in glass jar)
Method:
Fry the onions in some olive oil until tender, then add the bell peppers. Cover and cook to preference.
In the meantime start preparing the dough for the wraps. Mix the flour and yoghurt with a lug of olive oil. Adjust by adding yoghurt if too dry or flour if too wet until you get a dough that is not sticky but doesn't fall apart.
When the peppers are cooked, add in the passata or chopped tomatoes, seasoning and beans (you can pour in the bean water for extra liquid). Mix well and leave on a low heat.
Cut the dough into 8 equal pieces. With each piece, squash it under your palm on a well floured surface and roll it out as thin as possible using a rolling pin (being careful not to tear it).
Cook each wrap on a large, non-stick pan on a medium-high heat. The wraps should form some black rings on them. TOP TIP: This part is much easier with two people: 1 person rolling & 1 person cooking.
Best served with grated cheese (I use Godminster cheddar wrapped in wax) and hummus (homemade).
Here are some photos of the recipe. I happened to find an old packet of fajita seasoning but as I said above, this can be easily made up with spices that are already in your cupboard, even if you don't have all of them.
